Sparkling Methodé Traditionelle

The wine displays elegance and finesse typical of cool climate sparkling. An alluring bouquet of brioche, fresh dough and citrus blossom give way to peach and fresh nectarine on the palate, amplified by an extended period on lees.

We’ve paired the wine with this delicious baked Camembert recipe for a starter.

Black Spur Chardonnay

This wine was created from three clones of Chardonnay which were grown on our Black Spur vineyard at Healesville. Each clone contributes a different element to the complexity of the finished wine. A classic example of cool climate Yarra Valley Chardonnay, the wine exhibits characters of fresh citrus, honeysuckle and almond with an amazing long and textural mouth feel.

Pair with this delicious honey, sage and bacon roast chicken.

Black Spur Rosé

Made from Pinot Noir and Grenache this Rosé is mouthwateringly delicious with fresh strawberry, rhubarb and fresh fig flavours. It is the Grenache component that creates the luscious, generous fleshy mouthfeel. Handpicked, sorted and whole bunch pressed to stainless steel tank to maximise varietal expression.

For convenience with flavour we’ve paired with Peking Duck.

Black Spur Pinot Noir

Hand-picked and sorted from our Healesville vineyard. The nose is alluring with aromas of fresh red berries. The palate continues with the red berry theme and has some savoury and spice notes. The wine was allowed to mature for 9 months in a mix of new (30%) and seasoned French oak. Oak was selected that highlights the berry fruits, adds palate weight and lengthens the beautiful silky finish.

Try with this delicious mushroom risotto.

Black Cameron Shiraz

A complex Shiraz, deep red in colour, showing flavours of dark cherry, plum, mulberry, spice and cedar with soft tannins.

Matured for 18 months in a selection of new (30%) and seasoned French oak. Oak was carefully selected that highlights the inherent fruit flavours, adds to the spice and lengthens the palate.

Pairs beautifully with this scrumtious BBQ beef brisket.

Braveheart Cabernet Sauvignon

An appealing nose of blackberry, cherry, tobacco and cedar. Medium-bodied the palate is well structured and balanced with characters reminiscent of bramble, cherry and mocha with fine silky tannins.

Sensational match with Lamb, red wine and rosemary pot pie.
