Blackberry – Cedar – Dark Chocolate
Complex characters of Cassis fruit, red currant and dark chocolate on the palate combine with long firm tannins to create a rich, ripe classic example of Yarra Valley Cabernet. Single block hand-picked and sorted from three possible blocks. Whole berry wild fermentation in open pots. Left on skins for 7-10 days, seeded and pumped-over twice daily to extract optimum flavour and tannin. Pressed when dry. Matured in new (30%) and seasoned French oak for 18 months.
