Blackberry – Mocha – Fine tannins
An appealing nose of blackberry, cherry, tobacco and cedar. Medium-bodied the palate is well structured and balanced with characters reminiscent of bramble, cherry and mocha with fine silky tannins.
All three Cabernet blocks were hand-picked and then fruit specifically selected for this wine. Predominantly mature vine fruit was fermented wild in open pots for 7-10 days, with a twice-daily pump-over to extract optimum flavour and tannin. Allowed to mature for 18 months in new (30%) and seasoned French oak, carefully selected to complement the fruit with subtle cedar spice. Overall, we sought to use oak that provides balance and support without overpowering the fruit flavours. Extended cellaring will be rewarded.
