Citrus – Mineral – Textural
This wine was created from three clones of Chardonnay which were grown on our Black Spur vineyard at Healesville. A classic example of cool climate Yarra Valley Chardonnay, the wine exhibits characters of fresh citrus, honeysuckle and almond with an amazing long and textural mouth feel.
In the winery, the fruit was whole-bunch pressed, cold settled and racked to French oak barrels. Spontaneous ferment with 50% of the wine allowed to continue through malolactic fermentation, followed by maturation for 10 months.
