Raspberry – Savoury – Spice – Silky
An elegant cool climate Pinot Noir oozing aromas of fresh red berries, plum, rosemary and spice. A generous mouth feel and flavours of cherry, raspberry, savoury spice are extended by the long silky finish.
A year of two distinct halves. Dry and warm until December, then cooler, with significant rainfall, from January on. Hand-picked and sorted from our Healesville vineyard. 10% whole bunch, 90% whole berry to add texture and complexity. The must was allowed to ferment spontaneously and was hand plunged daily through a 20 day fermentation.
The wine was allowed to mature for 9 months in a mix of new (30%) and seasoned French oak. Oak was selected that highlights the berry fruits, adds palate weight and lengthens the finish.
