2016 Braveheart Cabernet Sauvignon

A long, warm ripening period produced wines of rich and generous character. It was one of the best vintages in the last 10 years. Our cool climate vineyard in Kangaroo Ground is home to the rare, black basalts soils, responsible for producing this classis Yarra Valley Cabernet Sauvignon.Dark crimson in colour, with complex characters of cassis fruit, red currant, bay leaf and dark chocolate on the palate combine with long firm tannins to create a rich, ripe classic example of Yarra Valley Cabernet. Single block hand-picked and sorted from three possible blocks. Whole berry wild fermentation in open pots. Left on skins for 7-10 days, seeded and pumped-over twice daily to extract optimum flavour and tannin. Pressed when dry. Matured in new (30%) and seasoned French oak for 18 months.
