Leftover Wine? Here Are Some Smart (and Delicious) Ways to Use It

Leftover wine might sound like a myth, but it happens. Once opened, wine begins to change fairly quickly as oxygen dulls flavours, so before you pour it down the sink, here's how to give it a second life.

1. Keep It Fresh for Longer

Preservation systems using an inert gas like argon create a protective layer over the wine to help preserve aroma and flavour. Or simply freeze leftover wine in ice cube trays — not for drinking, but perfect for cooking later.

2. Turn It Into Something New to Drink

Red wine and cola (kalimotxo) — a Basque classic, refreshing and easy. Sangria — forgiving and endlessly adaptable, ideal for slightly tired light-bodied reds. Mulled wine — gently heated with spices, citrus and a little sweetness. New York Sour — leftover red wine layered on top of a whiskey sour for colour, fruitiness and complexity.

3. Cook With It

Braising — red or white adds body and richness to slow-cooked dishes. Deglazing — wine lifts the caramelised flavour stuck to the pan after searing meat. Marinades — even faded wine's acidity helps tenderise and add subtle flavour. Homemade vinegar — with leftover wine, raw vinegar containing the "mother", and patience, you can make your own.

Leftover wine doesn't have to feel like a problem to solve — sometimes the second act is just as good as the first.
