2025 Black Spur Sauvignon Blanc

The 2025 Black Spur Sauvignon Blanc glows pale straw in the glass and bursts with aromas of mandarin, gooseberry, tropical fruits and a gentle grassy lift. The palate is bright and refreshing, showing layers of lime, mandarin and pineapple wrapped in a fine line of subtle minerality.Hand-picked in February 2025, the fruit was whole-bunch pressed and racked after two days before undergoing a cool, 14-day fermentation on light lees at around 20°C. The wine then rested on lees for two months, adding delicate texture before being bottled early to capture its pristine freshness.The result is a lively, aromatic Sauvignon Blanc that beautifully reflects the cool elegance of our Healesville vineyard.
